COOKED POTATO, AVOCADO AND CHIVES SALAD
Potato and avocado salad. This time, we are going to prepare a cold dish that takes just a few minutes. A light and healthy salad, in which we will use only 3 ingredients. This salad is one of my favorites for its simplicity. You just have to cook some potatoes, cut, and mix your ingredients and that’s it! A delicious first course in a few minutes. For today’s salad, we are going to use avocado, a fruit that likes a lot, for its healthy properties and its characteristic flavor. And we are going to dress it with apple cider vinegar and olive oil. A dressing that goes very well in a good potato and avocado salad.

- 2 avocados
- 100g fresh parsley

POTATO AND AVOCADO SALAD RECIPE

These are the steps to prepare this rich and healthy potato and avocado salad, in a few minutes:
1. We cook the potatoes without peeling.
In a pot, we put the potatoes and add water until they are well covered. We heat it up, and let the potatoes cook for 35 minutes. After this time, we prick them with a knife to check if they are completely cooked. If the knife goes through them easily to the center, you can remove them from the heat.
2. We peel and cut the potatoes
Next, with the help of a knife, we remove the skin from the potatoes. We cut them into medium bite-sized pieces. Then, we put them in a bowl where we will also add the rest of the ingredients of our potato and avocado salad.
3. We cut the onion into julienne strips, the avocado into slices, and chop the parsley.
Once this is done, we cut the onion into julienne strips, that is, into thin strips. We remove the skin and pit of the avocado and cut it into bite-size slices. We put everything in the bowl, along with the potatoes, and we also add the finely chopped parsley.
4. Finally, we dress the salad with oil, vinegar, and a pinch of salt.
To finish, we add a pinch of salt, a splash of oil, and another of vinegar. Add this dressing to your liking. We stir so that everything mixes and we have this potato and avocado salad ready to serve. Healthy and delicious!
