INGREDIENTS FOR 4 PEOPLE
- 1kg pumpkin
- 2 eggs
- 100ml milk
- 200g of grated cheese
- 1 teaspoon of nutmeg
- 1 handful of fresh parsley
- salt and pepper
HOW TO MAKE THE GRATINATED PUMPKIN WITH CHEESE
1.- In a saucepan with plenty of boiling water, add a pinch of salt. Next, we add the pumpkin cut into bite-size pieces. We let it cook here for about 10 minutes.
2.- When it is cooked, remove the casserole from the heat and drain the pumpkin from its water. Afterward, we dry it well and reserve it on a plate.
3.- Once this is done, we continue with our recipe for pumpkin gratin with cheese. In a bowl, put the eggs, the milk, the finely chopped parsley, and the nutmeg. Season and beat all the ingredients well so that they are integrated. Then we add the pumpkin and mix everything again.
4.- In a baking dish, we put this mixture that we have just prepared and put it in the oven, previously heated to 180ºC, with heat up and down. We let everything cook for about 25 minutes until the mixture of our pumpkin gratin with cheese sets.
5.- After this time, we remove the pan from the oven. We sprinkle everything with the grated cheese and put the dish back in the oven. We raise the temperature to 200ºC with heat only on the top or grill and let everything cook for another 5 minutes until the cheese begins to brown. We serve immediately.
